Commenting on Matthew 12:7 (with a reference to Hosea 6:6), Hilary of Poitiers writes:

The work of our salvation is not in sacrifice but in mercy, and, now that the Law has ceased, we are saved by the goodness of God. If they had understood the reality of this gift, they would never have condemned the innocent, that is, the apostles. On account of jealousy they were bound to be accused of having broken the Law, because it was through them that, once the ancient practice of sacrifices ceased, the reformation of mercy came to the benefit of all people.
