Are there any resources regarding the context or background of the 'Judaisms' and their respective beliefs during Jesus' time? It seems a lot of what I am finding is either focused on Paul or is from the Jesus seminar people or those like them.

Maybe try "The Life and Times of Jesus the Messiah" by Alfred Edersheim, who was a converted ninetenth century Jew. This work is online.

He also wrote the smaller work "Sketches of Jewish Social Life in the Days of Christ" and "The Temple and its Ministry and Services at the time of Christ"

John Lighfoot wrote a commentary on the New Testament, apparently mainly the Gospels, with insights from his study of the Talmud and Hebraica, which is available at Christian Classics Ethereal Library.

I second the vote for Ederscheim. He does a lot of higher-criticism bashing which needs to be fast-forwarded through, but he really did understand the times.
