Does anyone know of a list of all the Biblical texts that postmillennialists appeal to? If so, is it online anywhere?

While I am not a postmillennialist, David Chilton in his Productive Christians in an Age of Guilt Manipulators has a list of postmillennial verses in one of the appendices. I think you can find that book at Gary North's freebooks website.

Isa. 45:22-25 Look unto me, and ye shall be saved: all the ends of the earth shall be saved: for I am God, and there is none other. I have sworn by myself: the word is gone out of my mouth in righteousness, and shall not return, That every knee shall bow unto me, and every tongue shall swear by me.
Surely he shall say, In the Lord have I righteousness and strength: he shall come unto him, and all that provoke him, shall be ashamed. The whole seed of Israel shall be justified, and glory in the Lord.
Jer. 31:44 34 And they shall teach no more every man his neighbor and every man his brother, saying, Know the Lord: for they shall all know me from the least of them unto the greatest of them, saith the Lord: for I will forgive their iniquity, and will remember their sins no more.
Zech 9:9 the Lord shall be King over all the earth: in that day shall there be one Lord, and his Name shall be one.
I think Amillennialists use these passages also. They are not used in reference to this millennium, but to the Last day or to the age to come.

I try to avoid terms like "literal" but we'll go with this. The postmillennialist and premillennialist understand this verse to refer to the space-time cosmos before the end of history. The amillennialist who is also a pessimist relegates this to "heaven." But that robs the verse of its force. Of course heaven will be filled with the glory of the Lord. That's a truism and not the issue at stake.
If the a-mill relegated this verse to space time history he would be a postmillennialist.
. The real question is more about where the NT. apostasy verses are fulfilled. Around 70ad,14Now thanks be unto God, which always causeth us to triumph in Christ, and maketh manifest the savour of his knowledge by us in every place.
15For we are unto God a sweet savour of Christ, in them that are saved, and in them that perish:
16To the one we are the savour of death unto death; and to the other the savour of life unto life. And who is sufficient for these things?
17For we are not as many, which corrupt the word of God: but as of sincerity, but as of God, in the sight of God speak we in Christ.

I am not up to snuff with the different styles of interpreting scripture in the context of eschatology, but what would be wrong with saying that Numbers 14:21 is talking about the gospel of grace being throughout the world instead of just with God's people in Israel?

Not sure I agree with that.

Or he would be one who believes the second coming, resurrection, and the new heavens/earth are historical events and thus do get fulfilled in time/space history.
