Upgrading a Netbook

So I went ahead and purchased a Netbook for my boys, as I described in this thread). What I purchased was an Asus Eee PC 1005PEB 10.1 Netbook 1.66GHz 1GB 250GB WiFi (seen here)

Now I want to upgrade it a bit. I have a licensed copy of Windows 7 Pro, but I don't want to lose all the Netbook apps Asus puts on it. Has anyone here used a Netbook with Windows 7 Starter? What are the limitations? Is there a way to upgrade and keep the apps?

Also, it appears to me that it only has one slot for RAM. Is that correct? It came with 1GB of RAM. Would it run smooth with 2GB?

Third, I want to get an external optical drive so the boys can use it as a portable DVD player (of sorts). Any suggestions as to what would be best/cheapest?

Finally, are there any helpful accessories (beyond wireless keyboard/mouse) that I should be looking at?
