Is it true? -- "God is most glorified in us when we are most satisifed in Him"

This quote will be true if certain things are presumed and false if something else is meant. The Biblical God receives the most glory from man when men are wholeheartedly satisfied with praising and serving him "in spirit and in truth".
 
The quote was gleaned by Piper from Jonathan Edwards' writings.

I think it is true, b/c if we were more satisfied in something other than God, then we would not be honoring God as the fountain and source of all good. Instead, we would see something else as better. As Calvin said, he is like the sun, whose beams of goodness should drive us to reflect upon their source, and to delight in that source more than the beams themselves.
