What books would you recommend to someone who wants to learn more of Covenant Theology and Paedobaptism???

Easy reading preferred.
 
This is rather short on Baptism but outlines the Paedobaptism postion.

Adams, J. E., The Meaning and Mode of Baptism (Phillipsburg: 1980).

Chaney, J. M., William the Baptist (Grand Rapids, repr., 1982)

Sartelle, J. P. What Christian Parents Should Know About Infant Baptism (Phillipsburg, 1985).

These are very basic introductory texts.

It does not get much easier than William the Baptist by James M. Chaney

It is a short work written in dialogue format. The most difficult part may be the 19th century tongue, but even that is not too difficult to overcome. Most of the work is dedicated to mode (which I found to be the best defense for non-immersion), but the final chapters deal with reasons and application.
